Sweet Summer Treats for Texas RV Road Trips
It’s only June and the heat index is already through the roof! After a long day of playing in the water, hiking and getting into some mischief, the only other thing the kiddos need is a sweet treat to cool down from the hot Texas sun. Sure you can buy a pint of ice cream down the road at the grocery store, but is that really an adventure worth bragging about? We are about to give you the recipe (and the bragging rights) to some of the easiest and sweetest popsicles, slushes and sorbet recipes for RVs with smaller kitchens and counter space.
Your Childhood Favorite: Creamsicle
This creamsicle slush takes almost no effort with only a few ingredients and one piece of equipment: A blender!
Ingredients:
- ¾ cup of orange juice
- ½ cup of milk
- 3-4 orange slices
- 2 tbs of vanilla extract
- 2 handfuls of ice cubes.
Just dump all the ingredients into the blender and pulse until the ice is completely crushed. Pour the creamy goodness into some glasses (make sure they are about level or this might cause a riot between all the kids) and send the kiddos outside to enjoy the slush and God’s beautiful creation.
Summer Fruits: Watermelon & Strawberry
This watermelon and strawberry sorbet is the perfect gluten free and dairy free treat for the kiddos (plus there is no added sugar)! You’ll be able to treat the kids with this dessert and still give them the daily fruits they need.
Ingredients:
- ½ cold water
- 5 cups of frozen, seedless watermelon (cut in chunks)
- 1 ¼ cup of frozen strawberries
- ¾ cup of sweetener or honey
- 2 tbs of lemon juice
Just dump all the ingredients into the blender and blend until smooth. This treat can be served right away or put in a tupperware container and placed in the freezer.
A Summer Classic: Homemade Popsicles
This Jell-O popsicle recipe puts all other popsicles to shame with it’s flavors and (Drum Roll PLEASE) it’s consistency. What's so exciting about consistency? Because we are using a Jell-O mix, when the popsicle starts to melt, it turns into a Jell-O consistency on the stick instead of running down the stick and turning your kids into sticky monsters!!
Ingredients:
- 1 3 oz package of Jell-O
- 4 cups of water
- 1/3 cup of granulated sugar (optional)
Bring 2 cups of water to a boil. In a medium size bowl, mix the Jell-O mix and the sugar together. Once the water is boiling, pour in the mixture and stir until completely dissolved. Stir 2 cups of cold water and then pour the mixture into the popsicle molds. Place in the freezer until they are ready to be devoured. This popsicle recipe might take up some counter space in the kitchen, but at least your kiddos won’t be running around with sticky hands & arms...who are we kidding, bodies!
Fruit, fruit, fruit: Fruity Popsicles
This fruity tooty popsicle is perfect for the kiddos running around and needing some natural sugar. PLUS there is just something more appealing about eating fruit in a popsicle versus in a bowl that your mom is making you eat.
Ingredients:
- 1 16 oz bottle of Vita Coco Coconut Water
- Their favorite fruits (Strawberries, blueberries, kiwi, oranges)
Cut up their favorite fruits and place them in the popsicle mold. Pour the coconut water in the mold until it is ¾ filled. Place the popsicles in the freezer and wait until they are frozen. Not only are these popsicles filled to the brim with antioxidants and natural sugars, but the popsicle is just plain gorgeous with all the colors of the fruit.
