Heavenly Cast Iron Recipes for Cooking Day!

Fried Meat Pies
This recipe is from a man that is very well-known in the cooking industry, Kent Rollins. Kent is known as the “Chuck Wagon Cowboy Cook” so I think he might know a thing or two about making the best Fried Meat Pies in a cast iron skillet.
Ingredients (Pie Dough):
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 stick butter chilled & cut into tablespoon-sized pieces
- 3/4 - 1 cup water
- 1/3 cup olive oil
Instructions:
In a large bowl, combine the flour, baking powder, and salt. Cut the butter into the flour with a fork or pastry cutter until it has a cracker-crumb consistency. Slowly stir in the water until combined. Stir in the olive oil. Flour your hands & knead the dough together for about 1 minute. Turn the dough out onto a floured surface and knead, adding a bit more flour if necessary, until all the stickiness is gone. Roll out to about 1⁄8 inch thick. Cut into about 5-inch circles.
Now that the pie dough is done and ready to be stuffed, let’s turn our attention onto the pie filling!
Ingredients( Pie Filling):
- 1 pound ground beef
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ancho chile powder
- 2 cups chopped cabbage
- 1/3 cup diced Anaheim peppers 1
- 1/3 cup cup diced jalapeño
- 1/3 cup cup grated carrot
- 1/3 cup chopped yellow onion
- 1/3 cup chopped green onions
- 2 teaspoons minced garlic
- 1 tablespoon Worcestershire sauce
Instructions:
In a large cast iron skillet, brown the meat over medium heat. Add the dry ingredients (paprika, cumin, oregano, and ancho chile powder). Once these spices are mixed in well, reduce the heat to medium-low and let simmer for 3 minutes. Now it’s time to stir in the Anaheim peppers, jalapenos, carrots, onions, green onions & garlic. Reduce the heat to low, cover and stir occasionally for 5-7 minutes. After the vegetables are tender, remove from the heat and stir in the Worcestershire sauce. Spoon about 2 heaping tablespoons onto each dough circle. Fold over and crimp the edges with your fingers or a fork. In a medium saucepan, heat 2 to 3 inches of oil over medium-high heat until about 350°F. Fry the pies, a few at a time, until golden brown, about 2 minutes per side. Serve warm.
Cast Iron Chicken Pot Pie
This oooey-gooey chicken pot pie is heavenly, especially on cooler fall nights! This recipe calls for minimal & basic ingredients. You can bake this recipe in a cast iron skillet or over a fire, for the full glamping experience.
Ingredients
- 1 rotisserie chicken shredded.
- 1 can mixed vegetables.
- 1 can cream of chicken soup.
- Salt & pepper to taste.
- 1 bunch fresh parsley chopped. (optional)
- 1 can of buttermilk biscuits
Instructions:
Preheat the oven to 425 degrees or prepare the hot coals for the dutch oven. In a large bowl, shred your rotisserie chicken. Drain the liquid from the can of mixed vegetables and add them to the bowl of shredded chicken. Mix well. Spoon in the can of the cream of chicken soup and add salt and pepper. Scoop this mixture in to the cast iron skillet and level it out. Open the can of biscuits, separate them and place them on top of the mixture, one at a time. Bake for 18-20 minutes. Sprinkle the chopped parsley on top and serve.
GiGi’s Fried Chicken
Was there one dish you always hoped you grandma would make during the holidays or when you came to visit? Well, this dish is mine. Popeye’s chicken sandwich doesn’t have anything on my Gigi’s fried chicken!
Ingredients:
- 1 large egg
- 1 cup 2% milk
- 2 cups mashed potato flakes
- 1 tablespoon garlic powder
- 1 tablespoon each dried oregano, parsley flakes and minced onion
- 1/2 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
- 4 boneless skinless chicken breast halves (6 ounces each)
- Oil for frying
Instructions:
In a shallow bowl, whisk egg and milk. In another bowl, toss potato flakes with seasonings. Remove half of the potato mixture and reserve (for a second coat of breading). Pound chicken with a meat mallet to 1/2-in. thickness. Dip chicken in egg mixture, then in potato mixture, patting to help coating adhere. Arrange chicken in an even layer on a large plate. Cover and refrigerate chicken and remaining egg mixture 1 hour. Discard remaining used potato mixture. In a 12-in. cast-iron or other deep skillet, heat 1/2 in. of oil over medium heat to 350°. For the second coat of breading, dip chicken in remaining egg mixture, then in unused potato mixture; pat to coat. Fry chicken 4-5 minutes on each side or until golden brown and chicken is no longer pink. Drain on paper towels or brown paper bags.
Dutch Oven Peach Cobbler
Congratulations, you have made it to my favorite recipe in this blog: dessert! This might be the only exception to the classic rule, “Eat your dinner first!”
Ingredients:
- 60 oz. of canned sliced peaches (drain & save the juice)
- 1 box of yellow cake mix
- 1 stick of butter
- 1 tablespoon of cinnamon
Instructions:
Prepare your coals. Place 8 coals on the ground. Using a 10” dutch oven, pour in the drained peaches. In a bowl, combine the cake mix and 1- 1 1/3 cup of the peach juice to make into cake batter. Sprinkle ½ cup of the brown sugar on top of the peaches then pour the cake mix and juice on top of that. Spread the batter evenly. Cut the butter into small pieces and arrange evenly on top of the batter. Sprinkle the remaining ¼ cup brown sugar and cinnamon. Put the lid on and put 14 coals on top. Bake for 25-35 minutes. Top with ice cream & enjoy!
